Pattison Media: Ultimate Christmas Desserts

During the Christmas season, our team at Pattison Media is once again producing positive stories based around holiday traditions and accomplishments for the region.

We asked staff members to share their favourite Christmas treats and desserts with fond or funny anecdotes.

Marty Martinson (battlefordsNOW): Lefse

For me, there is no food that says Christmas like Lefse. Growing up with big family get-togethers at grandma and grandpa’s, the traditional Norwegian flatbread was always a staple of the season around the dinner table, topped up with a thin layer of butter and sugar and then rolled up together…mmm, always lots of sugar!

Nic Fransoo (Q98): Christmas Cookies

I think of Christmas cookies when I think of spending time with my mom. Every year she would make a selection of Christmas Cookies. Everyone has their own traditions but my mom always made a few that, as a little kid, I could help with. A simple Snow Balls recipe is first on the list, take a candied cherry (red or green) and roll it up in a ball of short bread! But, my all-time fave had to be molasses cookies that she would cut into Christmas shapes and spread icing on, then we would decorate with sprinkles!

Josh Ryan (battlefordsNOW): Candy Cane Popcorn

It lacks the nostalgia of other holiday entries, but nothing beats the divine, mouth-watering combination of popcorn and candy canes.

A staple in the Ryan household, the creation of this heavenly dessert is accomplished by grinding up candy canes (peppermint flavoured, unless you’re adventurous), melting white chocolate, popping popcorn and mixing the three together and baking in the oven to solidify the texture. There are many favourites amongst my clan, but the one unifying constant that receives approval is a batch of these simple pieces of crunchy, processed sugar-laden goodness.

Kelly Bitner: Ginger Snap Cookies

Every time my grandma and grandpa came over to our house when we were kids, ‘gramma’ brought cookies. A whole variety, but especially ginger snaps, and every time they came over, my dad seemed to get a “Mother-in-Law Migraine”. It happened for years, until one time, grandma didn’t bring Ginger Snaps. Dad didn’t get a migraine, after another test or two, we discovered ginger triggers migraines for my dad. Which means, more ginger snaps for us!

Curtis Kotchorek (CJNB): Whiskey

Whiskey is good, whiskey is fine, whiskey is tastier than your wine.

With hints of caramel and Sherry, drink enough and you’ll be merry.

And for those of you who don’t like the nog, on your plate at Christmas a slab of Frog.

Angela Brown (battlefordsNOW): Christmas Pudding

Best described as a moist dark fruit cake filled with raisins and currants, Christmas pudding is heated in the oven while the mildly sweet custard sauce is warmed up in a pot on top of the stove. Then the creamy sauce is added to the pudding in a beautiful marriage of tastes. Usually before digging into the dish, I would fork out as many of the currants from the pudding as possible, since they just aren’t my cup of tea.

And speaking of tea, the best way to enjoy a classic Christmas pudding is accompanied by a hot cup of Red Rose tea.
